Every cook needs two or three chicken recipes they can fall back on without thinking. This has quietly become one of mine.

Method

  2. 2.Caramelize the chicken with olive oil then add a maggi cube and boil it for around 30 minutes.

  4. 4.In another pot, add all the veggies and caramelize them till they are soft.

  6. 6.Once everything is done, add the rice, raisins & spices to the veggies and add 2 and a half cups of water for the rice to cook.

  8. 8.Once the rice is done put everything in the oven.

Notes

Swap things out as needed. I've made this with whatever was in the fridge more than once and it always worked.

The first time I made this I followed the steps word for word. Now I take my liberties. You will too, and that's the point.
