Chicken Fajita Mac and Cheese

I'm convinced people who think chicken is boring have never had chicken cooked with any patience. This recipe is my small argument in chicken's favor.

Method

  1. 1.Fry your onion, peppers and garlic in olive oil until nicely translucent. Make a well in your veg and add your chicken. Add your seasoning and salt. Allow to colour slightly.
  2. 2.Add your cream, stock and macaroni.
  3. 3.Cook on low for 20 minutes. Add your cheeses, stir to combine.
  4. 4.Top with roasted peppers and parsley.

Notes

I'd rather undercook this slightly than overcook it. The residual heat usually takes it the rest of the way.

Taste as you go. My measurements are approximate because I never actually measure anything.
